Caribbean Beach Bread and Coconut Pineapple Ice Cream

I made Tastefully Simple's Caribbean Beach Bread last night for the first time and it was amazing, especially served with coconut pineapple ice cream. The warm cake with the cold ice cream and the tropical flavors were a hit!

I prepared the bread mix as directed on the box: cake mix with 8 oz of crushed pineapple (in juice) and 3/4 cup of water. I baked it for 45 minutes at 350 degrees and let it cool for 15. Then I served it with Dreyer's Slow Churned Coconut Pineapple ice cream.



It's light and fluffy and not too sweet. Perfect for breakfast or a light dessert. It was so easy to make and absolutely DELICIOUS! I will definitely be making this again very soon.
