Caribbean Beach Bread and Coconut Pineapple Ice Cream

I made Tastefully Simple's Caribbean Beach Bread last night for the first time and it was amazing, especially served with coconut pineapple ice cream. The warm cake with the cold ice cream and the tropical flavors were a hit!

I prepared the bread mix as directed on the box: cake mix with 8 oz of crushed pineapple (in juice) and 3/4 cup of water. I baked it for 45 minutes at 350 degrees and let it cool for 15. Then I served it with Dreyer's Slow Churned Coconut Pineapple ice cream.



It's light and fluffy and not too sweet. Perfect for breakfast or a light dessert. It was so easy to make and absolutely DELICIOUS! I will definitely be making this again very soon.

Lovin' Lemon Slush Drink Mix
Blue food coloring
Prepared Juicy Watermelon Margarita Mix

Scoop out half of the prepared Lovin' Lemon Slush Drink Mix into a small bowl. Add enough blue food coloring to turn the slush into a lively blue.

In wine glasses or other tall glass, layer the blue slush followed by the white Lovin' Lemon Slush Drink Mix and top with prepared Juicy Watermelon Margarita Mix.

Valentine's Day Wine Baskets

Halloween Treats

Witch Fingers!

These were a hit at the office Halloween potluck, so I made a second batch for the kids. The recipe is as follows:

Ingredients:
1 egg
1/2 cup (1 stick) very soft butter
3-4 drops green food coloring
Absolutely Almond Pound Cake Mix™
Whole almonds

Directions:
Combine first 3 ingredients; stir to blend. Add pound cake mix, stir until dough forms. (Squeeze with hands, if necessary to form dough). Roll dough into “fingers” approximately 3-inches long and 1/2-inch wide; press an almond on the end of each one to make a fingernail. Place 2 inches apart on a greased baking sheet. Score the middle of the fingers two or three times with a sharp knife to make knuckles. Bake at 350° for 10-12 minutes or until lightly browned. Cool completely on baking sheet. Makes 32-34 fingers.

Crab-Witches

Ingredients:
Creamy Crab™ Cheese Ball Mix
8 oz. softened cream cheese
1/2 cup mayonnaise (real mayonnaise only)
5-6 oz. lump crabmeat
1/2 cup minced celery
Small party buns, split

Directions:
Combine first 5 ingredients; chill 2 hours. Spread cream cheese mixture on party buns to make small sandwiches; serve immediately. Makes 10-12 servings.


Edible Eyes

Ingredients:
2 Tbsp. Smoked Paprika & Garlic Dip Mix
8 oz. softened cream cheese
8 small pimento-stuffed green olives, halved

Directions:
Combine first 2 ingredients; chill 2 hours. Roll cream cheese mixture into 1-inch balls; press half an olive into each ball to make eyes. Chill until served. Makes 16 eyes.


Banana Pumpkin Bars

Ingredients:
Pumpkin Patch™
1 cup water
2 eggs
2 bananas, mashed (about 1 cup)
1 cup white chocolate chips

Directions:
Combine ingredients in a large bowl; stir until blended. Spread batter in a grease 9x13 baking pan. Bake at 350° for 30 minutes or until toothpick inserted in center comes out clean. Cool completely. Makes 24 servings.

No tricks - just treats!

Make our Pumpkin Patch™ in cupcake tins, top with cream cheese frosting and accent each one with a sweet spider. (Just roll out a black gumdrop and cut out eight strips for legs. Stick another gumdrop on top, and place in the center of the cupcake.)

Create an apparition appetizer! Shape our Creamy Crab™ Cheese Ball Mix into a ghost and add two sliced black olives for the eyes.

Mold cream cheese into the shape of a hand on a small plate; press in whole almonds at the tips for fingernails. Spoon Sweet Pepper Jalapeño Jam over the back of the hand as a ghoulish garnish.
